Rach Eats Lunch: Nuggets, Waffles and Beans

Yesterday, I couldn't be bothered. At least, not bothered to cook. I had a recipe in mind, but the thought of it bored me rigid. And, to be honest, I felt really flat, and depressed, and my heart just craved comfort. Do you ever get those moments? Rather than force myself into Doing The Right Thing, which often involves compromise on my part, I decided to go with my gut. It was asking, no, begging for nuggets. And we've got these vegetarian nuggets in the freezer which were, not even joking, calling my name. And you know what? I just wanted to cook them and sink my teeth straight into them. So I did.

I once read somewhere that chicken nuggets, waffles and beans have the same calorie count as a big plate of a fancy, protein-packed salad, and to be honest, you cannot argue with that. Salads aren't bad, don't get me wrong, but when faced with the choice... wouldn't you rather have your favourite nineties' tea? Served in front of Newsround, and Neighbours, and, gasp, switch it off, it's the BBC Evening News. And I know people will say This Is Not A Recipe, like the ones who see the words "1 box cake mix" in a quantity do... but I'm aiming this solely at everyone who is just starting out when it comes to cooking. There is no shame in learning how to cook nuggets!

Serves 1

You'll need:
5 big chicken (or, in my case, vegetarian) nuggets
2 potato waffles
1/2 tin baked beans

1. Line a baking tray with paper and reheat the oven to 180℃. Arrange the chicken nuggets and potatoes and waffles on the tray, and pop it straight in the oven for 25-30 minutes until the nuggets are piping hot all the way through, and the waffles are crispy.

2. While you wait, pop the beans into a microwavable dish, and cover. When you're positive the nuggets and waffles are ready, leave them in the oven and microwave the beans for 2.5 minutes.

3. Take the nuggets and waffles out of the oven and artfuly arrange on a plate. Spoon over the beans, and devour like it's 1999 and CBBC is still on BBC One.

If this doesn't comfort you and soothe your soul a little bit, I don't know what will! Also, I absolutely love the Southern Fried Quorn nuggets. Just saying. It's not an ad, either!
