Simple chilli pasta recipe

Okay, so my sleep hygiene is slowly improving... and yes, my knockout drops are working. Think I'll be investing in more very soon. Sleep hygiene, eh? What a weird way of describing how to drop off. I remember a good few years ago when I was going through telephone CBT (it was a bit too much chocolate teapot for my liking, if I'm honest... but I'm willing to do it all over again, actually, if it's better this time) and one of the ladies at the mental health team actually popped this really helpful leaflet in the post about it. Basically sleep hygiene is how you prepare yourself and your environment for all those lovely zizzles you're going to have later on. And the weird bit is that everyone's different - I prefer cold, dark, silent rooms to sleep in, where other people like falling asleep to noise with the light on. And socks. Anyway - I may have gone off kilter with my sleep due to feeling anxious AF (as flip) and the recent heatwave, but we can only hope it's picking up now. Thanks, Rescue Remedy!

Today's recipe is a super simple one, mainly because it just involves rummaging through the cupboard and popping a pan of hot water on the go. One of my friends vaguely mentioned this recipe a few years ago and it's stuck in the memory ever since. It's Italian, and nope, can't remember the actual Italian name for it... but it's essentially spaghetti, covered in a bit of olive oil and doused in chilli flakes. And served with cherry tomatoes and chicken, if you really want to beef (or should that be chicken?) it up. Right, aprons on, let's go. You know what you're making for dinner tonight.


(So spicy, you'll have salt and vinegar lips...)

Serves 1

You'll need:
100g dried spaghetti strands
1 tablespoon chilli flakes
1 teaspoon olive oil
1 large handful cherry tomatoes, sliced
1 piece frozen chicken breast (optional)

1.This is simple beyond belief - if you're serving with chicken, preheat the oven to 180 and line an oven tray. Pop the chicken on it and cook it for about 20-25 minutes until piping hot.

2. Halfway through, boil up a pan of hot water and drop in the spaghetti - allow it to cook until soft and swollen. Drain the water, leaving the spaghetti in the pan, and add the olive oil. Stir it up until it's fully coated, then drop in the chilli flakes and give it another good stir.

3. If you're serving with chicken, take it out of the oven, pour the spaghetti into a bowl, add the cherry tomatoes... and finally... top with the chicken. Easy! Eat immediately.

Yep - that was super easy and super delicious, and completely well worth it. Go on... you know you wanna!
