Rach Eats Lunch: Piri Piri Flatbread

You know something, I'm sitting here, writing this blog post, feeling completely and utterly discombobulated. Yes, really. I seem to be forgetting everything lately, and getting into trouble because of said forgetfulness. I forgot to go to the bank yesterday - I forgot to bring my purse! Oops! Then I forgot to check if a parcel had arrived. Then I forgot to fold washing. I've not had the best of days. I will say though, I am currently drinking a turmeric latte (handmade, I must add, by yours truly) and eating homemade banana bread and it is bliss. I'm also listening to the sweary, feminist pop masterpiece that is Hard Out Here by Lily Allen. It is such a tune, but get the swear jar out. You're going to need it.

So yeah. Today's recipe has a different name than I'd like it to, mainly because a certain chicken restaurant has first dibs on the proper name, and I'd rather not get into trouble for it. I've even checked Google, just to be completely sure. (There's red bird's eye chilli in these babies - okay, so it's not a ghost chilli or a Scotch Bonnet, but it's still blooming hot.) Either way - I tried the sauce that features in the recipe yesterday and it blew my head off. It actually plumped my lips up, totally by mistake, and I needed two glasses of water to get over the shock. Which is why I'm putting this blisteringly hot sauce into a flatbread, of course. It is June, after all.

Piri Piri Flatbread
Blow me, this is hot.
Ingredients
  • 110g self raising flour
  • 70g plain soya yoghurt
  • 1 tablespoon piri piri sauce
  • 1 teaspoon salt
  • 1 box microwave chips (optional)
Instructions
You know how this works: measure out the flour, yoghurt, salt and piri piri sauce into a bowl, and beat it together until it forms a dough.Between two pieces of baking paper, roll the flatbread out to 1cm thickness. Preheat the panini press.Pop the flatbread on the panini press and press it down for 2-3 minutes until boiling hot and fluffy. Peel back the paper, and serve with microwave chips. Eat immediately. Drink water. No one is safe.

And with that, you have lunch - it's boiling hot, yet ridiculously delicious, and well worth a try. Just don't forget the water!
