Rach Eats Lunch: Sweet Potato Vegetarian Curry

Vegetarian sweet potato curry recipe

As I write this, I'm huddled in the corner next to the plug socket, so I can charge my laptop up. Hilariously, I'm also sitting right next to a clothes airer. It's wet out. Wet, and windy. Weather warnings in place and everything. It's November here for me, and January for you guys, and I am listening to Christmas music - yes, really! Okay, it's too early-slash-late for that, really, but it's Sia's album and it's absolutely fantastic, not cheesy or silly at all! It's lovely. I love it. Think I'm on the third listen already. I've just got to work out how to use a clothes airer, really. I mean, what do I do with it? Do I just leave it? It's so simple it's confusing!

Just like today's recipe. It's based on my old favourite classic recipes involving sweet potato - the pasta and the spiced soup - but today we're adding vegetarian chicken pieces to the mix and serving it up alongside a side of rice, making it a warming, veggie curry that you're bound to love!

Sweet Potato Vegetarian Curry
Mildly spicy, super satisfying.
  • 100g vegetarian chicken pieces
  • 1 large handful sweet potato, cubed
  • 75g chickpeas, drained
  • 2 tablespoons light soy sauce
  • 1 teaspoon garlic
  • 1 tablespoon fajita spice mix
  • 1 teaspoon salt and pepper
  • 50ml boiling water
  • 1 packet microwave rice
Start off by defrosting the vegetarian chicken pieces in a bowl.Measure out the chickpeas and sweet potato into a saucepan. Add boiling water and boil the vegetables for about 20 minutes until completely soft. Drain all the water out, reserving a small splash for the sauce.Pop the sweet potato and chickpeas in a blender, along with the soy sauce, garlic, spice mix and salt and pepper. Blend it up until completely smooth. Add a bit of hot water to make it pliable if needed, but add an extra spoon of soy sauce to help keep the flavour.Pour the sweet potato mixture back into the pan and start to reheat it through. Once it's piping hot, throw in the vegetarian chicken pieces and cook for 15-20 minutes until cooked through.Pop the rice in the microwave, and cook as per packet instructions. Add to the plate, along with the curry sauce, and serve immediately. Enjoy!
