Chicken, tomato and feta flatbread recipe


Mate, it's Monday where I am and I think there's just the tiniest hint of normality in the air. Well, almost. My brother's home from New York! Yay! I think you've been hearing about this New York trip on the blog for weeks! Oops, sorry! Anyway, I don't know about you but sometimes I just run out of ideas on what to make myself, and I worry that one of these days I'm going to have barely anything to make or write about. Kind of like an End-Of-The-Internet thing. Is anyone ever going to find the end of the internet? Is anyone ever going to find the last recipe of all time? There is, unsurprisingly, so many variations of recipes, anything you like you can pop it in a recipe in place of something else and then call it your own. So no, I don't think we'll ever run out of recipes. I do think I'll run out of variations while using the same ingredients though.

Today, I got hangry. Yes, really. I feel terrible. I think I was just a bit ratty on the phone to my Mum earlier and I feel horrendous. Yet I still feel agitated, if you see what I mean. For no apparent reason. Just need to shake that out of me, somehow. Argh. I think I haven't been sleeping all that well and the stickiness is getting to me ever so slightly... But today's recipe is actually an easy one, because it's a perfect, quick meal to make that doesn't involve too much crashing and banging, just in case someone is jetlagged and napping upstairs... It's quick, it's easy, it's tasty. There's a good bit of nutrition in it. You're going to love it, quite simply!

Chicken, Tomato and Feta Flatbread
Easy, tasty lunch for busy days.
Ingredients
  • 110g self raising flour
  • 70g plain soya yoghurt
  • 1 teaspoon salt
  • 1 frozen chicken breast
  • 30g feta cheese, crumbled
  • 1/2 salad tomato, sliced
Instructions
Line a baking tray and preheat the oven to 180℃, then pop a chicken breast on the tray and whack it in the oven for 25-30 minutes until piping hot.While we wait, let's make the flatbread! Combine the self raising flour, salt and soya yoghurt in a bowl until it makes the perfect squashy dough. Roll it out between two pieces of baking paper, until it's about 1cm thick.Slice up the feta, tomato and onion, then heat up a panini press. As we always do, heat the flatbread up on the panini press for 3 minutes until hot and bread-like. Peel it off the paper and stick it on a plate.Remove the chicken from the oven, butterfly the chicken breast (thin strips) and scatter over the flatbread, along with the tomato and feta. Devour immediately.
